This new venture all started as a need to use up some sweet potatoes before they went to seed and spoiled, seriously. Some experimenting with them in the kitchen spawned a new snack and dessert that is low glycemic, and no sugar added. Dairy, soy, nut, and egg free. Gluten free. Anti-inflammatory... and dang good tasting!
Hi, I am Scott Campbell, Founder and owner of Love in My Tummy Foods, LLC. I started the company to share these crazy good snacks I make from sweet potatoes. I have heart disease and struggle with insulin resistance, even though I am not diabetic. You don't have to be diabetic to be insulin resistant. My struggle with insulin resistance has caused me to carry weight in my belly all my life. This issue has also helped perpetuate fatty liver disease. Two major components of my family coronary artery disease.
In 2012, at 47 years old, I had a triple bypass. My grandfather died at 51, dad at 45, older brother at 41, all from heart attacks. In 2016, I was diagnosed with hypothyroid and thyroid covered in nodules. After frustration with no help but pills, I went to see a recommended naturopath... Dr. Lori changed my life forever! I learned that food is medicine or poison from Dr. Lori when she set me on an anti-inflammatory lifestyle. In two weeks I was sitting in squats for the first time in 20+ years. Almost 7-years later, the thyroid nodules have not grown since the first ultrasound. I have maintained weight loss. And I feel great!
UPDATE: Just when you think you have things licked... Oct. 2019 I had a bad atrial fibrillation moment that ended on Dec. 28th with a cardiac ablation and a week later on Jan. 5th I went back to the emergency room and got two stents and an angioplasty installed. A testament to the fact that disease is seldom "cured" and must be maintained. Had I reverted back to my old ways, I probably would have been dead long ago. This was just a tune-up, an oil change.
My first and biggest change was removing Sugar from my house, well except for the hummingbird feeder, and my diet in general. No more high fructose corn syrup. Sodas, sauces, and pretty much all sweets, except for the occasional treat. Trying to stop eating sugar away from home was virtually impossible. Almost nothing is sugar-free, or at least no-sugar added, and most of I did find was terrible in taste and texture. Food labeled "sugar-free" was loaded with sugar ingredients hidden with names only a rocket scientist can pronounce. It has been a difficult road going sugar-free. Now my motto is, "IF YOU CAN'T PRONOUNCE IT, DON'T EAT IT!" With the invention of allulose, we now have a delicious, natural, plant-based, low calorie, low glycemic, anti-inflammatory, diabetic and food allergy-friendly, fantastic tasting snack! My next step was looking at removing gluten and inflammatory foods, and how this was affecting my body and mind. I started working with a dietician and also a naturopath! I got tested for food allergies and though most were mild, Xanthan Gum put me in the emergency room one night. A change to anti-inflammatory eating was now on the menu forever. So, after all of this, I had to find an alternative snack that satisfied my cravings AND was good for me. Have you ever eaten pudding that is low calorie and or sugar free that tasted good? I haven't. Have you ever eaten any "snack" or "dessert targeted for diabetics or people with food allergies" that tasted good? I haven't. Having the pleasure of eating a snack that is 100% good for me and tastes great, was unheard of. But NOT ANYMORE. GoodPūD is my saving grace.
Circling back to the sweet potatoes in the corner of the kitchen going to seed, I got a bright idea. Experimenting, I found a way to make the smoothest pudding texture and it tasted awesome! Adding Cacao Barry fine Swiss cocoa with some allulose to sweeten it, and viola! A new snack is born. I have given it to everyone from diabetics and friends with dietary restriction to people that eat anything. Virtually all of them are blown away I made this pudding from sweet potato, crazy good! Except for those who just do not like sweet potato, I know right? They are out there. My girlfriend was one of them, now a convert, she was a potential customer at a Farmers' Market. "I don't like sweet potato..." that was before the Sweet Potato Pie, then Thin Mint Cookie set the hook, because it is off the hook fantastic tasting!
Since my change to an anti-inflammatory lifestyle, 95% of what I eat, I make. I have always loved creating dishes I have eaten in other countries, it's a blast creating something that tastes like you remember and sharing it with friends! My love of cooking, and the engineer in me, has been a marriage of experimenting in the kitchen, my laboratory. Making new flavors, playing with different ingredients of the finest quality has always been a passion of mine. Now I get to do it for you! I love sharing my creations, and watching faces light up with surprise when they taste GoodPūD!
Every ingredient is fresh, non-GMO, and organic when in available. I strive to find as many ingredients as possible that are grown and produced in the Pacific Northwest. NO ARTIFICIAL INGREDIENTS, JUST FOOD!

Chocolate Fudge is our first offering. We use the finest unsweetened Swiss cocoa available. The mouth watering taste is so good, you will not believe our pudding is made from only three (4) ingredients, or, maybe that is the secret...
We love it just as it is, however, we encourage you to be adventurous. Try adding raw nuts, healthy granola, fresh fruit like bananas. We love it as an add to oatmeal in the morning; it makes a great add for the workout breakfast.
